Chocolate Chip Cookie Dough Energy Balls

This week’s recipe is thanks to our lovely Hilary. “Why don’t you make another energy ball recipe this week,” Hilary suggested at our weekly meeting. “Great idea!” I responded, as I started dreaming of cashews and dates and chocolate! We love energy balls because, not only are they yummy, but they’re simple and made with real ingredients. No “high fructose corn syrup” or other ingredients that you need a PhD in chemistry to decipher. These are made with real ingredients, take minutes to make and can satisfy your sweet tooth without the dreaded sugar crash that comes with less healthy sweet treats. All you need is a food processor and 10 minutes. We recently brought in dark chocolate chips by Enjoy Life that are free of milk, peanuts, tree nuts and soy…..so we just had to try them out!

Chocolate Chip Cookie Dough Energy Balls

2 cups raw cashews
1 cup pitted Medjool dates
1 teaspoon vanilla
1/8 teaspoon salt
1/4 cup dark chocolate chips (we used Enjoy Life)
2 tablespoons hemp hearts

Pulse cashews and salt in food processor until they resemble coarse sand. Transfer cashews to bowl and set aside. Add dates to food processor and pulse until well combined and they form a ball. Return cashews to food processor and process dates and cashews until well combined. Add hemp hearts and continue to process. Return mixture to bowl, add vanilla and chocolate chips and mix until well combined. Once well combined, roll mixture into balls, place on wax paper-lined tray and place in fridge until firm. Once firm, transfer balls to air-tight container and store in fridge or freezer. Enjoy!
