Coconut, Date and Gogi Balls

Oh when the sweet tooth strikes!! Pantry doors go flying, frantic scurrying through the fridge and freezer in a mad quest to satisfy the urgent call for sweetness. This, my friends, is the scene that took place prior to the creation of these little nuggets of goodness. It just so happens that these are conveniently nut-free, so they are safe and appropriate to tuck into lunches for school and other nut-free places. These also include hemp, which I try to sneak in whenever possible. Hemp seeds (often called hearts) are a great source of plant-based omega-3 fats, protein, magnesium and fibre. Hemp grows easily in the Canadian climate and nourishes the soil rather than depletes it. While I love a variety of exotic super-foods from around the globe, it sure makes sense to me to embrace the ones that are native to our region. The sweetness comes from dates, and texture and further goodness come from coconut and goji berries. Best of all, they’re made quickly and easily without a lot of mess.

Coconut Goji Balls

1 cup pitted, packed dates
1 cup coconut
1/4 cup hemp
1/4 cup goji berries
1 tablespoon coconut oil
1 teaspoon vanilla
1/4 teaspoon sea salt

Toss everything into a food processor until well combined. Roll into balls and store in fridge or freezer. Enjoy!
