Fig Walnut Energy Balls

In addition to satisfying my sweet tooth (sigh), I was highly motivated to make use of walnuts. There’s this idea that things in nature that resemble parts of the human body are extremely nourishing to said body part. Walnuts are a perfect example. What does a walnut look like? It’s a pretty creepy replica of the human brain. Turns out, the fats in walnuts are exactly what the brain needs. My favourite source for walnuts are from my friends at Truly Organic Foods. Nothing makes me happier as it relates to nutrition than to FINALLY recognize that healthy fats are not evil. Our nervous system, hormone production, weight management, and yes, even cardiovascular health is very much dependant on an adequate intake of healthy fats. Plus – food just tastes better. When our body is adequately nourished, we’re much less likely to overeat. We’re allowed to enjoy our food!

Fig Walnut Energy Balls

2 cups organic walnuts
1 cup shredded coconut
1 cup figs
1 cup Medjool dates (pits removed)
1 teaspoon vanilla
1/2 – 3/4 teaspoon sea or mountain salt
2 tablespoons coconut oil
1/4 cup goji berries
1/4 cup sweetened nibs or dark chocolate chips
Additional coconut for rolling – optional

Process in food processor until mixture holds together when pinched. Roll into balls. Roll in shredded coconut. Store in fridge or freezer.
