Did you know that December 16th is “Chocolate Covered Anything” Day?

To celebrate this most auspicious of days, we thought we would create an easy and healthy chocolate bark. We also thought that adding salted pistachios and goji berries would make for a colourful and festive product!

We used 5 Mushroom Drinking Chocolate by Harmonic Arts. It includes the healing properties of Chaga, Reishi, Cordyceps, Turkey Tail and Lion’s Mane. We also used cacao butter as it makes for a wonderful chocolate product with lovely texture that is stable at room temperature.

Better yet, this recipe calls for only 4 ingredients – yay!

No Bake 5 Mushroom Chocolate Bark

2/3 cup cacao butter (we used Harmonic Arts cacao butter wafers)
6 tablespoons Harmonic Arts Drinking Chocolate powder
1 – 2 tablespoons chopped salted pistachios
1 – 2 tablespoons goji berries

In double boiler, gently melt cacao butter wafers. Once melted, remove from heat and add Drinking Chocolate powder. Pour mixture into parchment paper baking cups or silicone cups. Place in refrigerator for 5 – 10 minutes to firm up just a bit, but you don’t want it to become solid. Sprinkle pistachios and goji berries…you want them to adhere to chocolate mixture but not sink….I know, First World problems!
