Raw Grain-Free Granola

Regardless if you’re strictly following a Paleo or Gluten-free diet, many are choosing to cut back on grains. This can be tricky if you enjoy traditional granola. In an effort to create the satisfying fullness of granola without grains, I experimented with some ingredients I had on hand. While it’s not difficult, it does involve soaking and dehydrating, so maybe this will be your “nudge” to get a dehydrator or consider befriending someone who has one! Kidding aside, you can always adjust the recipe to use your traditional oven; some nutrients will be lost with the higher heat, but it’s still healthy and nutritious.

Raw, Grain-Free Granola

1 cup raw pumpkin seeds
1 cup raw cashews
1 cup raw walnuts
2 tablespoons coconut oil
2 teaspoons maca root powder
2 tablespoons maple syrup
2 tablespoons raw cacao powder
1 cup coconut
2 tablespoons hemp seeds
2 tablespoons chia seeds
1/4 cup goji berries
1/4 cup cacao nibs or dark chocolate chips *optional*

Soak pumpkin seeds, cashews and walnuts 4 – 6 hours or overnight. Rinse and drain well. Toss everything but the berries and nibs into food processor, pulsing to incorporate. You want it to still be chunky. Fold in berries and nibs. Distribute evenly on dehydrator sheets, and, depending on humidity, it should be dry and crispy between 12 – 24 hours. If you’re using a traditional oven, use lowest possible temperature, and check frequently. It should be dry and crispy, not overdone!
