Robb’s (a) Slice Kind Bars

This Sunday we got to do something we’ve been wanting to do for a very long time. As we’re drawing ever closer to completion of the upper floor of the studio, we were able, today, to invite people up to the “karma kantina” to enjoy one of Robb’s delicious energy bars and cup of freshly brewed tea or coffee. In addition to the great energy this evoked, we also raised funds for our local animal shelter…win, win, win!

In addition to his many other talents, Robb enjoys spending time in the kitchen. He came up with this recipe a few weeks ago as he was doing what he does best – “How can I use up the various bits and pieces of what I have on hand?” This, my friends, is the seed to many a fine creation. Get creative with whatever you have on hand.

Because Robb embraces this “whatever you have on hand” approach so fully, these bars never come out exactly the same. For instance, this recipe calls for 1/4 cup of ground flax. This time we didn’t have ground flax on hand, so Robb increased the oats by a 1/4 cup. So please, I encourage you to be creative.

These are best kept in the fridge.

Robb’s (a) Slice Kind Bars

2 cups oats
2 cups pitted dates
1/2 cup brown rice syrup
2 tablespoons maca powder
1/2 cup natural organic peanut butter
2/3 cup coconut
2 tablespoons chia seeds
1/4 cup ground flax (if omit, simply increase oats by 1/4 cup)
1/4 cup goji berries
2 tablespoons coconut oil – warmed to liquid
1/2 cup dark chocolate chips or cacao nibs

In food processor, add oats, maca and chia seeds and blend well. Add remaining ingredients and continue to pulse until all ingredients are well incorporated. Spread onto parchment-lined cookie sheet evenly. Score into desired size slices and store in fridge. Enjoy!
