Super Food Soup with Broccoli, Avocado & Hemp

This week’s creation makes use of avocado to lend a lovely creamy quality to the soup, while adding much-needed healthy fats.

With the added benefit of broccoli and its indole-3-carbinol, plant-based omega 3 fatty acids from hemp hearts, the anti-fungal and anti-viral properties of coconut oil (not to mention the medium chain triglycerides), this is chock full of superfoods!

Superfood Soup

1 T coconut oil
1 onion diced (approx 1 cup)
2 cloves garlic – minced
3 cups vegetable stock (may need more to thin soup)
5 cups chopped broccoli (peel stems)
1 avocado – pitted and cubed
1/4 cup hemp seeds
Sea salt and pepper to season

Saute onion and garlic in coconut oil until translucent. Add stock, bring to boil, reduce heat and add broccoli, simmering just until broccoli is tender (don’t overcook). Add avocado and warm through. Using a high-speed blender or immersion blender, add hemp seeds and blend soup until smooth. Season to taste with salt and pepper and enjoy!
