Blueberry Lemon Gummies

These are fun and sure to be a hit for the young, and young at heart!

In our spirit of having more “play”, what could be more fun than delicious gummy treats?

Even better, these contain pure protein which is readily assimilated, and they don’t have nasty stuff like high-fructose corn syrup, artificial flavours and colours.

I adapted this recipe from some Paleo sites (Wellness Mama and The Food Lovers Kitchen), and I am happy with the results.

Blueberry Lemon Gummies

2 cups blueberries (I used frozen)
1/2 cup freshly squeezed lemon juice
2 tablespoons maple syrup
1/3 cup Great Lakes Gelatin (orange can)

Warm blueberries, lemon juice and maple syrup in heavy saucepan until bubbly. Add to high speed blender, and process well. Take lid off blender to let contents cool slightly. Add gelatin and blend again. Pour into molds (I have some fun-shaped silicone molds) and set in fridge for about half an hour or until set. You could also pour into a square baking pan, and simply cut into pieces once set.
