Cauliflower Thai Bowl

Blessed with this summer heat the past few weeks, I’ve been reluctant to spend extra time in the kitchen. This is the time of year when I really embrace raw foods. Having said that, I find it hard to digest raw veggies such as cauliflower and broccoli. So in the following recipe I lightly steam the cauliflower, however for those of you with a heartier constitution you can certainly eliminate that step 🙂

This was inspired by a desire to enjoy a nice Thai sauce with a little heat. It’s still a work in progress, so if you try this out I sure would appreciate your feedback.

Cauliflower Thai Bowl

1 head of cauliflower – cut into florets, and pulsed in the food processor to resemble rice
1 pepper – sliced/diced – however you like it
1 purple onion – thinly sliced
Cilantro – as much as you like or can stand

Thai Peanut Sauce
1/2 cup organic unsweetened peanut butter
1/2 full fat coconut milk
3 T fresh lime juice
3 T Tamari sauce
1/2 T minced garlic (or more)
1 T maple syrup
1 T your favourite hot sauce
1 T minced ginger root

Assembly

Combine cauliflower, pepper and onion in large bowl. Add Thai peanut sauce as desired and garnish with cilantro….as much as you can stand 😉
