Coconut Lime Banana Popsicles

These are easy. These are good. Enough said.

Bananas, coconut milk, lime, chia, and maple syrup. How could you possibly go wrong?

These are quick, tasty and nutritious. Simply combine a can of good quality coconut milk (I like Native Forest) with a banana, 4 tablespoons of freshly squeezed lime juice (1 lime), 1 tablespoon of chia seeds, 2 tablespoons of maple syrup (I like McCutcheon’s). Blend in a high speed or immersion blender. Pour into popsicle molds. I poured extra into these cute heart-shaped molds. Depending on the ripeness of your banana, you may wish to alter the amount of maple syrup. The riper, of course, the less you need. The addition of chia adds some protein, fibre, magnesium and iron. These are truly a guilt-free treat!
