Golden Goji Bites

 

These were so easy and delicious!

I’m a snacker. If I don’t have healthy snacks lurking in every corner of my home, I’m in trouble. I will reach for the worst possible thing if healthy options are not “good to go”. If you’re ever missing a box of crackers, it was probably me that stole it (sorry). Since I was kind enough to pass this admirable gene onto my boys, it’s imperative that I keep healthy snack around at all times.

I had a craving for something sweet balanced with some tartness and crunch. I hadn’t experimented with golden berries mixed with dates, but thought they would work well together (I was right). Loving the colour and added nutrients of goji berries, I thought I would add them to the mix. Both golden berries and goji berries are unique in that they have significant protein, which is unusual in a fruit. They also have tons of other nutrients so please, put down those sweetened dried cranberries and make the switch! The crunch came from almonds, and an additional boost of protein and omega 3’s came from hemp hearts. The end result was pretty tasty, and I know some of you sampled them last Friday and seemed to agree.

These should take less than 10 minutes to make if you have a food processor on hand. I have my mother’s Cuisinart food processor which is well over 30 years old and works like a charm!

Golden Goji Bites

3/4 cup golden berries
1/4 cup goji berries
3/4 cup pitted dates
3/4 cup almonds
1/4 cup hemp hearts
pinch – 1/8 teaspoon mountain salt.

Blend all ingredients until well incorporated. Mixture should hold together well when pinched(If not, perhaps add a date or two to moisten mixture). You can press dough into a pan and make bars, or use a silicone mold (thanks Janie). Store in fridge or freezer.
