Pepper Salad with Nutritional Yeast Dressing

Huge score at the Farmers’ Market this weekend: peppers galore! Oh how I love fresh peppers with a great dressing and a pop of fresh onion!

This dressing is a B-vitamin powerhouse and super easy to make. Vegans (and non-vegans alike) rely on nutritional yeast for its versatility, great cheesy taste and B-vitamin and protein boost. Personally, I think every house should have nutritional yeast on hand. It’s a great cheese alternative loaded with goodness. Even if you only use it as a popcorn topping, it’s great to have on hand.

Several foodie chefs I admire make terrific dressings with nutritional yeast. Being the perpetual cherry picker that I am, I “borrowed” elements from several recipes to come up with my own dressing which had to pass the test of my discerning boys (not an easy task). Poured over chunks of pepper and onion, this made a nice side dish for dinner.

Tri-colour Pepper Salad

1 each of yellow, red, orange peppers
3 green onions
nutritional yeast dressing – to taste, and  recipe follows

Chop onions and peppers into bite-size pieces. Toss with dressing to taste.

Nutritional Yeast Dressing

1/2 cup nutritional yeast
1/3 cup tamari
1/4 cup water
4 tablespoons apple cider vinegar
3 tablespoons maple syrup
1 cup good olive oil
1 teaspoon onion powder
2 cloves garlic – minced

Whisk above ingredients until smooth. Store in air-tight container in fridge.
