Raspberry Beet Smoothie

Oh this was not only pretty, but really tasty! Pigment-rich foods make me happy – not only for their visual impact but because I know they’re generously loaded with goodness….and these simple pleasures fill me with joy.

This smoothie is loaded with anti-oxidants, vitamins, fiber, minerals and enzymes. Beets are also anti-inflammatory, in addition to supporting the liver and being rich in iron – what’s not to love?

You will need a high-speed blender to adequately puree the beet…you may wish to chop the beet into small pieces to make it easier on your blender.

Adding avocado adds a creaminess to your smoothie without adversely affecting flavour, and it is an excellent source of heart- and brain-healthy fats.

Raspberry Beet Smoothie

1 cup filtered water
1 small beet – chopped
1 cup raspberries – I used frozen
2 tablespoons fresh lemon juice – (1/2 a lemon)
1/4 avocado
1 tablespoon hemp seeds
1 teaspoon bee pollen
1 tablespoon Sun Warrior or protein powder of choice
1/2 teaspoon of vitamin C powder
1 small date (1 Parnoosh, or 1/2 a Medjool)

Add above ingredients in high-speed blender and blend until well combined. Enjoy!
