Raw Chocolate Walnut Stuffed Dates

I recently had what I thought was a brilliant idea – stuff dates with brain-healthy walnuts. Easy, tasty, and nutritious – bam! Then I thought what would really knock them out of the park would be to dip them in chocolate. To keep them healthy, it couldn’t be just any old waxy, processed chocolate. It had to be raw, and it had to be good! Making raw chocolate isn’t difficult per say, but it can be tricky. I wanted to use a combination of cacao butter and coconut oil that resulted in a nice texture that didn’t instantly melt at room temperature – tricky indeed!

Raw Chocolate

3 tablespoons raw cacao butter – chopped
1 tablespoon coconut oil
1 tablespoon maple syrup
4 tablespoons raw cacao powder

Dates – (I prefer Medjool for this recipe) – pitted
Raw walnut pieces

The chocolate is super easy to make. Simply warm to liquid 3 tablespoons of cacao butter, 1 tablespoon of coconut oil and blend well. Then add 1 tablespoon of maple syrup (we prefer McCutcheon’s). Finally, whisk in 4 tablespoons of raw cacao powder and blend until smooth. Simply dip your pitted dates, which have been lovingly stuffed with raw walnuts, into the melted chocolate and place on a parchment-lined tray. Store in fridge or freezer. Enjoy!
