Raw, nut-free Golden Goji Bites

I know how challenging it can be to send healthy snacks off to school that are nut-free. Given the alarming rate of serious nut allergies, this is not something to be taken lightly.

Happy with the overall result of the Golden Goji Bites last week, I decided to experiment with a nut-free option that was just as tasty, and quick and easy. I love that these also have the added goodness of chia and pumpkin seeds. These have a significant amount of protein, and better yet, it’s protein that the body can readily absorb.

These turned out well, earned the approval of discerning boys, and hopefully will work out well in your home, too.

Raw, Nut-free Golden Goji Bites

3/4 cup golden berries
1/4 cup goji berries
1 cup pitted dates
1/2 cup raw sunflower seeds
1/2 cup raw pumpkin seeds
1/4 cup hemp hearts
2 tablespoon chia seeds
1 teaspoon vanilla
pinch – 1/8 teaspoon mountain salt.

Blend all ingredients until well incorporated. Mixture should hold together well when pinched (If not, perhaps add a date or two to moisten mixture, or water…just 1 teaspoon at a time).  Press dough into a pan and make bars. Store in fridge or freezer.
