Super Easy Granola

Inspired by the remarkable Kris Carr, I tried out her recipe for granola. I made a few adjustments to the recipe, and am really happy with the results. Tasty, crispy, nutritious and super quick to make! It has quickly become a family favourite!

Super Easy Granola

2 cups extra thick rolled oats (I used Bob’s Red Mill organic)
1/4 cup nut butter (I used cashew/almond butter)
1/3 cup maple syrup (I used our local McCutcheon’s)
1/2 cup raw almonds roughly chopped
1/2 cup large flake coconut (I used Bob’s Red Mill)
2 T chia seeds
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/4 cup golden berries *
1/4 cup mulberries *
1/4 cup goji berries*

Mix everything except the berries in a large bow. Spread evenly on parchment-line baking sheet. Bake at 300 degrees for 15 minutes. Remove from oven and stir well. Bake for an additional 5 minutes. Remove from oven….let cool, then add berries. Store in glass jar with tight fitting lid. Enjoy!
