Superfood Granola

This superfood granola is chock-full of brain-boosting nutrients. As much as we live in a fat-phobic society, our brain very much needs healthy fats, especially omega-3 fatty acids. With a goal of incorporating brain-frinedly ingredients, I included chia, hemp seeds, walnuts and avocado oil. Additional nutrients and benefits are provided by oatmeal, millet (protein), pumpkin and sunflower seeds, cinnamon (blood sugar regulation), and goji berries (lithium, anti-oxidants). We enjoy this with non-dairy milk, and it would also be great as a topping for fruit salad or with yogurt. I hope you enjoy it!

Superfood Granola

2 cups large flake oats
1/4 cup uncooked millet
1/4 cup hemp hearts
3 tablespoons chia seeds,
1/4 cup pumpkin seeds,
1/4 cup sunflower seeds,
1/4 cup chopped walnuts
1/2 cup large coconut flakes
1 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup avocado oil
1/2 cup maple syrup
1 teaspoon vanilla
1/3 cup goji berries
1/3 cup dried sour cherries or cranberries

Combine oats through salt in large bowl. In a separate bowl, whisk avocado oil, maple syrup and vanilla. Pour liquid over dry ingredients and coat ingredients well. Transfer to parchment-lined baking sheet in an even layer. Bake in preheated 300 degree oven for approximately 30 minutes, checking/stirring every 10 minutes. Granola should be lightly toasted. Cool, then added dried goji berries and cherries. Store in air-tight container.
