Sweet, Sweet Caramel Sauce!

Oh how I love caramel apples! This time of year in particular, I just love the combination of a crisp tart apple and the salty sweet goodness of caramel.

I found a recipe on my guilty pleasure site Thug Kitchen, which got me thinking about the match-made-in-Heaven combination of apple and caramel. Their recipe for caramel sauce looked terrific; however, I was hoping to opt out of brown sugar. So I took their recipe and opted for dates instead of brown sugar. Of course, this option would require a few more steps, but I thought it was totally worth it. I’m pretty sure the results speak for themselves as my handy photographer Robb, could be heard munching away during the photo shoot!

Yummy Caramel Sauce

1 cup full fat coconut milk
1/2 cup pitted dates (I used honey dates)
1 teaspoon vanilla
1/8 teaspoon sea salt

Blend ingredients in high speed blender. Once well incorporated, transfer to saucepan. Warm on medium heat to gentle boil. Continue stirring while boiling for 15 minutes, and mixture has reduced. Set aside for another 15 minutes and then enjoy with sliced apples. Should any be left over, store in sealed container in fridge.
